For the Spaghetti
  • 400 grams Spaghetti Substitute with gluten-free pasta if needed.
For the Sauce
  • 2 tablespoons Extra Virgin Olive Oil Add more for extra richness.
  • 3 cloves Garlic Fresh garlic recommended.
  • 400 grams Butternut Squash Any dense pumpkin variety can be used.
  • 200 grams Spinach Use fresh spinach.
  • 1 teaspoon Chilli Flakes Adjust according to heat preference.
  • 1 whole Lemon Use juice and zest.
For Garnishing
  • 100 grams Walnuts Can substitute with pine nuts or pecans.

  • to taste Pepper

Method
 

Preparation
  1. Preheat your oven to 220º C (430º F). Cube the butternut squash, coat it with olive oil and salt, spread on a baking tray, and roast for 25-30 minutes.
  2. In a skillet, heat olive oil over low-medium heat. Add diced garlic; sauté for 2-3 minutes, then add chilli flakes for another minute.
  3. Boil salted water in a large pot, cook spaghetti for 8-10 minutes until al dente, then drain, reserving some cooking water.
  4. Mash half the roasted squash in the skillet with garlic and chilli, add the whole roasted pieces, and combine for 2 minutes.
  5. Toss in the drained spaghetti and fresh spinach, adding reserved pasta water if needed for consistency.
  6. Finish with lemon juice, season with salt and pepper, and serve topped with walnuts and lemon zest.
