- Begin by heating 2 tablespoons of canola oil in a large skillet over medium heat. Once the oil shimmers, add ½ cup of whole unblanched almonds. Toast the almonds for about 3 minutes, stirring frequently until they turn golden brown and fragrant.
- In the same skillet, increase the heat to medium-high and add 1 pound of cubed boneless, skinless chicken breasts. Cook for 5-7 minutes, stirring occasionally, until the chicken is browned and no longer pink.
- While the chicken is cooking, grab a medium bowl and combine 2 tablespoons of cornstarch, 1 cup of chicken broth, ¼ cup of soy sauce, 2 tablespoons of honey, and 1 teaspoon of ground ginger. Whisk until smooth.
