Ingredients

  • 3 medium ripe bananas
  • 1 cup strawberries hulled and sliced
  • 1 cup blueberries
  • 1 cup Greek yogurt plain or vanilla
  • 2 tablespoons honey or maple syrup optional
  • 1 teaspoon vanilla extract
  • 1/4 cup granola for topping

Method

  1. Peel the bananas and cut them in half. Insert a popsicle stick into each half and place them on a parchment-lined baking sheet. Freeze for at least 1 hour until solid.
  2. In a mixing bowl, combine Greek yogurt, honey or maple syrup (if using), and vanilla extract. Stir until smooth.
  3. Once the bananas are frozen, remove them from the freezer. Dip each banana half into the yogurt mixture, ensuring they are fully coated.
  4. Roll the yogurt-coated bananas in the sliced strawberries and blueberries, pressing gently to adhere the fruit to the yogurt.
  5. Return the decorated bananas to the baking sheet and freeze for an additional 1-2 hours until the yogurt is firm.
  6. Before serving, sprinkle granola on top for added crunch. Enjoy your festive treat!
