  • 2 whole Cucumbers thinly sliced
  • 2 cups Pineapple fresh, cut into bite-sized chunks
  • 1 whole Red Onion thinly sliced
  • 1 handful Fresh Cilantro or Parsley to taste
For the Dressing
  • 3 tablespoons Olive Oil
  • 1 whole Lime Juice freshly squeezed
  • 1 tablespoon Honey or agave/maple syrup for vegan
  • to taste Chili Flakes optional
  • to taste Salt
  • to taste Pepper

Method
 

Preparation Steps
  1. Wash 2 cucumbers thoroughly and slice them into thin rounds. Place cucumber rounds in a mixing bowl.
  2. Cut a fresh pineapple into bite-sized chunks, and fold into the bowl with cucumbers.
  3. Slice a red onion thinly and add to the bowl.
  4. In a bowl, combine 3 tablespoons olive oil, juice of 1 lime, and 1 tablespoon honey. Add chili flakes, salt, and pepper. Whisk until combined.
  5. Pour the dressing over the salad ingredients and toss gently until coated.
  6. Finely chop cilantro or parsley and sprinkle over the tossed salad.
  7. Adjust seasoning with salt, pepper, or lime juice as needed, and serve immediately.
