Method
 

Step-by-Step Instructions
  1. In a large pot, bring salted water to a boil. Add orzo and cook for 7-8 minutes until al dente. Drain and rinse under cold water.
  2. Prepare fresh ingredients: soak diced red onion in lemon juice for about 10 minutes. Chop cherry tomatoes, mini cucumbers, and olives.
  3. Grate one mini cucumber for the dressing, squeezing out excess moisture. Combine yogurt, drained cucumber, lemon zest, lemon juice, minced garlic, olive oil, dill, salt, and pepper in a bowl. Whisk until smooth.
  4. In a serving bowl, combine cooked orzo, prepared vegetables, roasted red peppers, and crumbled feta. Add tzatziki dressing and toss gently.
  5. Taste and adjust seasoning if needed. Serve immediately or chill for 30 minutes before serving.
