Step-by-Step Instructions for Rhubarb Soda
- Wash and chop approximately 3 cups of fresh rhubarb into small pieces. Place in a medium saucepan with 1 cup of sugar and 3 cups of water. Stir to dissolve sugar.
- Put the saucepan over medium heat and bring to a gentle boil, stirring occasionally. Reduce heat and simmer for about 15-20 minutes until rhubarb is soft and syrup is light pink.
- Strain the mixture through a fine mesh sieve into a pitcher, pressing on solids to extract syrup. Discard solids.
- Allow the syrup to cool, then mix in the juice of one lemon.
- To serve, fill a glass with ice, pour in one part rhubarb syrup, and top with three parts chilled sparkling water. Stir gently.
