Method
 

Step-by-Step Instructions for Rhubarb Soda
  1. Wash and chop approximately 3 cups of fresh rhubarb into small pieces. Place in a medium saucepan with 1 cup of sugar and 3 cups of water. Stir to dissolve sugar.
  2. Put the saucepan over medium heat and bring to a gentle boil, stirring occasionally. Reduce heat and simmer for about 15-20 minutes until rhubarb is soft and syrup is light pink.
  3. Strain the mixture through a fine mesh sieve into a pitcher, pressing on solids to extract syrup. Discard solids.
  4. Allow the syrup to cool, then mix in the juice of one lemon.
  5. To serve, fill a glass with ice, pour in one part rhubarb syrup, and top with three parts chilled sparkling water. Stir gently.
