  • 3 tablespoons Fresh Oregano, minced Adjust based on what's available.
Vegetables
  • 3 large Tomatoes, seeded and chopped Any variety of tomatoes will work.
  • 1 medium Sweet Red Pepper, chopped Yellow or green peppers are substitutes.
  • 1 small Cucumber, seeded and chopped Zucchini is a nice alternative.
  • 1 small Zucchini, chopped You can leave this out if preferred.
  • 1 small Red Onion, halved and thinly sliced Scallions can serve as a milder option.
  • 1/3 cup Greek Olives, sliced Optional; omit for a non-olive salad.

Method
 

Preparation Steps
  1. Cook the pasta according to package instructions until al dente, about 8–10 minutes. Drain and rinse under cold water.
  2. Whisk together olive oil, lemon juice, balsamic vinegar, water, minced garlic, salt, pepper, and oregano in a small bowl.
  3. In a large bowl, combine pasta, tomatoes, sweet red pepper, cucumber, zucchini, and olives.
  4. Drizzle vinaigrette over the salad, add feta cheese, and toss gently to combine.
  5. Chill for at least 30 minutes before serving.
