  • 2 tablespoons Balsamic Vinegar Or similar vinegar
  • 1 medium Onion Roughly chopped
  • 1 medium Red Bell Pepper Chopped, may substitute yellow
  • 4-6 cloves Garlic Skins on for roasting
  • 2 tablespoons Olive Oil For roasting

Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine cherry tomatoes, sugar, balsamic vinegar, olive oil, salt, and pepper. Toss until well-coated.
  3. Pour the tomato mixture onto a parchment-lined baking sheet, add onion and bell pepper, and nestle garlic cloves in.
  4. Roast the mixture in the oven for about 45 minutes until blistered and caramelized.
  5. Remove from oven and allow to cool for about 10 minutes. Pinch the garlic to release the pulp.
  6. Blend all roasted ingredients until smooth, adjusting thickness if needed.
  7. Store the sauce in clean jars, allow to cool completely before sealing.
