Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Rinse the mini sweet bell peppers under cool running water and pat them dry. Slice each pepper in half lengthwise and remove the seeds and white flesh.
  3. Spoon generous amounts of goat cheese into each halved mini pepper, filling them to the brim.
  4. Place the stuffed mini peppers in a single layer in a baking dish.
  5. Transfer the baking dish to the oven and roast the mini peppers for 20-25 minutes until the skin is blistered and the cheese is warm and golden.
  6. Remove from the oven, drizzle with balsamic glaze and honey, then sprinkle with fresh thyme and black pepper before serving warm.
