Ingredients

For the Cookie Bars
  • 1/2 cup unsalted butter Adds richness and moisture; feel free to swap with coconut oil for a dairy-free option.
  • 1/2 cup brown sugar Imparts sweetness and a hint of molasses flavor; for a deeper taste, use dark brown sugar.
  • 1/2 cup granulated sugar Sweetens and helps create the perfect texture for the bars.
  • 1 large egg Binds everything together; you can replace it with a flax egg for a vegan alternative.
  • 2 teaspoons vanilla extract Enhances all the flavors; opt for pure vanilla for the best results.
  • 2 cups all-purpose flour Provides structure to the bars; can be substituted with a 1:1 gluten-free flour blend for a gluten-free version.
  • 1 teaspoon baking powder Helps the bars rise; you can use baking soda instead if necessary.
  • 1/2 teaspoon salt Amplifies flavors; adjust to your taste, especially if you’re using salted butter.
For the Salted Caramel Layer
  • 1/2 cup salted caramel sauce Brings that signature salted caramel flavor to your cookie bars; feel free to use homemade or store-bought.
For the Chocolate
  • 1 cup chocolate chips Infuses the bars with chocolatey goodness; dark or semi-sweet chocolate chips work best.

Equipment

  • 9x9 inch baking pan
  • Electric mixer
  • Mixing Bowl
  • Parchment paper
  • spatula

Method

Step-by-Step Instructions
  1. Preheat the oven to 350°F (175°C) and prepare a 9x9-inch baking pan by lining it with parchment paper.
  2. Cream together 1/2 cup of unsalted butter, 1/2 cup of brown sugar, and 1/2 cup of granulated sugar in a large mixing bowl using an electric mixer on medium speed until light and fluffy (about 3-4 minutes).
  3. Add 1 egg and 2 teaspoons of vanilla extract to the mixture, mixing until fully incorporated and smooth (1-2 minutes).
  4. In a separate bowl, whisk together 2 cups of all-purpose flour, 1 teaspoon of baking powder, and 1/2 teaspoon of salt. Gradually add this to the wet ingredients, mixing on low speed until just combined.
  5. Fold in 1 cup of chocolate chips gently with a spatula or wooden spoon until evenly distributed.
  6. Pour half of the cookie batter into the lined baking pan, spread evenly, then drizzle 1/2 cup of salted caramel sauce over it. Dollop the remaining cookie batter on top.
  7. Bake in the preheated oven for 14–16 minutes until the edges turn golden brown and the center remains slightly soft.
  8. Allow the bars to cool in the pan for at least 15 minutes before lifting them out and slicing into squares to serve.
