  • 2 pounds Beef can substitute with lamb
  • 2 pounds Pork try turkey for a leaner option
  • 1 cup Corn both fresh and frozen are great

  • 1 medium Plantain can swap for sweet potatoes
  • 1 medium Onion yellow onions are best
  • 4 cloves Garlic fresh is recommended
  • 1 medium Bell Pepper any variety enhances the dish
For the Seasoning
  • 2 tablespoons Oregano fresh recommended
  • 1 tablespoon Thyme basil is a suitable substitute
  • to taste Salt
  • to taste Pepper
For Serving
  • 4 cups Water or stock for added depth
  • 1 Lime Wedges for serving

Preparation
  1. In a large pot, season the chicken, beef, and pork with salt, pepper, oregano, and thyme. Let it marinate for about 15-20 minutes.
  2. Heat oil in the pot over medium heat. Add chopped onion, minced garlic, and diced bell pepper. Sauté for 5-7 minutes until soft and fragrant.
  3. Add the seasoned meats to the pot. Stir to combine and allow everything to cook together for another 5-7 minutes.
  4. Pour in water, bringing it to a gentle boil. Skim off any foam that forms. Reduce heat to a simmer and cover.
  5. Let the pot simmer for about 45 minutes, covered, ensuring it's not boiling too vigorously.
  6. Stir in diced potatoes, chopped plantain, and corn. Cook for an additional 30-40 minutes, uncovered, until vegetables are tender.
  7. Taste and adjust seasoning with more salt and pepper. Give it a good stir.
  8. Remove from heat and let sit for about 5 minutes. Serve hot with lime wedges.
