- In a large pot, heat a splash of olive oil over medium heat. Add the Italian turkey sausage and cook for about 5-7 minutes, breaking it apart with a spoon as it browns.
- Add finely chopped onion and minced garlic to the pot with the browned sausage. Stir frequently and cook for about 3-4 minutes, until the onion becomes translucent and tender.
- Stir in the chopped kale along with optional crushed red pepper flakes for heat. Pour in half a cup of white wine or chicken stock, followed by four cups of chicken stock, along with the drained and rinsed cannellini beans, diced tomatoes, and chopped sun-dried tomatoes. Stir well to combine.
- Increase the heat to bring the mixture to a gentle boil, then reduce to low heat. Let the soup simmer uncovered for about 15-20 minutes.
