Ingredients
  

For the Skillet
  • 2 tablespoons Olive Oil or avocado oil for a substitute
  • 1 pound Sausage pre-cooked varieties like cajun, andouille, or smoked sausage
  • 1 cup Red Bell Pepper diced
  • 1 cup Zucchini sliced into rounds
  • 1 cup Corn fresh kernels; frozen or canned works too
  • 1 teaspoon Chili Powder adjust to heat preference
  • 0.25 cup Cilantro chopped, optional

Method
 

Cooking Instructions
  1. Heat the skillet by adding olive oil over medium heat until shimmering, about 2 minutes.
  2. Slice the sausage and add to the hot skillet. Cook for 5 minutes without stirring, then stir and brown for an additional 3 minutes.
  3. Add diced red bell peppers to the skillet and sauté for about 4 minutes until tender.
  4. Add sliced zucchini to the skillet and stir occasionally, cooking for about 3 minutes.
  5. Incorporate the corn, sausage, and peppers into the skillet and cook for another 2-3 minutes until heated through.
  6. Season with chili powder and reheat on low for about a minute. Serve hot, garnished with cilantro.
