Ingredients
  

For the Kofta
  • 1 pound Ground Chicken can substitute with ground turkey
  • 1 medium Onion finely chopped
  • 3 cloves Garlic minced
  • 1/4 cup Fresh Parsley finely chopped
  • 2 teaspoons Ground Cumin
  • 2 teaspoons Ground Coriander
  • 1 teaspoon Salt to taste
  • 1/2 teaspoon Black Pepper to taste
  • 1 tablespoon Olive Oil for grilling
For the Sauce
  • 1 cup Plain Yogurt can substitute with coconut yogurt
  • 2 tablespoons Lemon Juice fresh is best

Method
 

Preparation
  1. In a large mixing bowl, combine the ground chicken, finely chopped onion, minced garlic, fresh parsley, ground cumin, ground coriander, salt, and black pepper. Use your hands to mix everything thoroughly until well incorporated.
  2. Lightly wet your hands and take small portions of the chicken mixture. Roll each portion into oval shapes, making sure they are compact, aiming for 10 to 12 koftas.
  3. Prepare your grill by preheating it to medium-high heat and oil the grates with olive oil.
  4. Carefully place the shaped kofta on the hot grill. Cook them for about 5 to 7 minutes on each side until golden brown.
  5. While the kofta are sizzling on the grill, combine plain yogurt with fresh lemon juice and a sprinkle of salt in a separate bowl. Mix until smooth and creamy.
  6. Once your Chicken Kofta are grilled, serve them alongside a generous dollop of the garlic yogurt sauce.
