  • 2 cups beef broth for enhanced flavor; vegetable broth can be lighter
  • 2 cloves garlic minced; powdered version is suitable if fresh is unavailable
  • 1 thumb-sized piece ginger minced; powdered version is suitable if fresh is unavailable

Step-by-Step Instructions
  1. Chop the beef chuck into bite-sized pieces, dice carrots and potatoes, slice the onion thinly, and mince the garlic and ginger.
  2. In a large pot, heat oil over medium-high heat, add the beef pieces, season with salt, and sear until browned, about 5-7 minutes.
  3. In the same pot, sauté the onions for 3-4 minutes until translucent. Stir in the garlic and ginger, cooking for another 1-2 minutes.
  4. Return the seared beef to the pot, sprinkle in curry powder, add carrots, potatoes, broth, and soy sauce. Mix thoroughly.
  5. Bring to a boil, reduce to low, cover, and simmer for about 60 minutes until beef is tender and sauce is rich.
  6. Taste and adjust seasoning if necessary; simmer for an additional 10-15 minutes if adjustments are made.
