  • 1 pound large shrimp peeled and deveined
  • 2 tablespoons jerk seasoning adjust for spice preference
  • 1 tablespoon olive oil can substitute coconut oil
For the Rice
  • 1 cup rice long-grain variety, cooked
  • 2 cloves garlic minced
  • 1 teaspoon salt to taste
For the Pineapple & Basil
  • 1 cup pineapple diced, fresh or canned
  • 1/4 cup basil fresh, chopped

Method
 

Cooking Instructions
  1. Marinate the shrimp in jerk seasoning for 15-30 minutes at room temperature.
  2. Cook rice according to package instructions until fluffy, then mix in basil.
  3. Sauté minced garlic in olive oil until fragrant, about 30 seconds.
  4. Add marinated shrimp to the skillet and cook for 3-4 minutes on each side until pink.
  5. Combine cooked shrimp, rice, and pineapple in a large bowl; mix gently.
  6. Serve immediately, garnished with extra basil leaves if desired.
