Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Slice zucchini in half lengthwise and hollow out the flesh to create boats. Brush with olive oil, season with salt and pepper.
  3. In a bowl, combine shredded chicken, diced red onion, BBQ sauce, and half of the mozzarella. Mix well.
  4. Fill each zucchini half with the chicken mixture, pressing slightly. Top with remaining mozzarella.
  5. Bake for 18-20 minutes, until cheese is melted and bubbly, and zucchini is tender.
  6. Remove from oven, cool slightly, garnish with toppings, and serve immediately.
