Step-by-Step Instructions
  1. In a medium-sized bowl, combine the chopped mango, diced tomato, finely chopped red onion, and minced jalapeño. Squeeze in the fresh lime juice and sprinkle with salt and pepper to taste. Gently mix all the ingredients until well combined, and set the mango salsa aside.
  2. Pat the mahi mahi fillets dry with a paper towel to remove excess moisture. Inspect the fillets for any skin or bones that may need to be removed.
  3. In a shallow bowl, blend together the chili powder, garlic powder, oregano, smoked paprika, cumin, and a generous amount of salt and pepper. Coat both sides of the mahi mahi fillets evenly with the spice mixture.
  4. Heat a cast iron skillet over medium-high heat and add avocado oil. Once shimmering, add seasoned mahi mahi fillets and cook for about 3-4 minutes, then flip and cook for another 3 minutes until flaky.
  5. Remove the blackened mahi mahi from the skillet, let it rest for a minute, and serve topped with the mango salsa. Optional: serve over cilantro lime brown rice.
