- Begin by slicing the brisket into 1½ to 2-inch chunks. Chill the parts of your meat grinder in the freezer for about 20 minutes.
- Once your grinder is ready, grind the chunks of brisket for a coarser or finer texture.
- In a large mixing bowl, combine the freshly ground brisket with brown sugar, garlic, onion powder, thyme, chile powder, smoked paprika, salt, pepper, and mustard. Mix well.
- Divide the mixture into six equal portions and shape them into burger patties, about ¾ inch thick with a slight indentation in the center.
- Preheat your grill to about 350°F. Clean and lightly oil the grill grates.
- Place the formed patties on the grill over indirect heat. Cook for approximately 5-7 minutes on one side.
- After the initial sear, flip the burgers and cook for an additional 8-10 minutes, or until the internal temperature reaches 165°F.
- Remove the burgers from the grill, let them rest for a few minutes, and serve on buns with your choice of toppings.
