Method
 

Step-by-Step Instructions
  1. Begin by slicing the brisket into 1½ to 2-inch chunks. Chill the parts of your meat grinder in the freezer for about 20 minutes.
  2. Once your grinder is ready, grind the chunks of brisket for a coarser or finer texture.
  3. In a large mixing bowl, combine the freshly ground brisket with brown sugar, garlic, onion powder, thyme, chile powder, smoked paprika, salt, pepper, and mustard. Mix well.
  4. Divide the mixture into six equal portions and shape them into burger patties, about ¾ inch thick with a slight indentation in the center.
  5. Preheat your grill to about 350°F. Clean and lightly oil the grill grates.
  6. Place the formed patties on the grill over indirect heat. Cook for approximately 5-7 minutes on one side.
  7. After the initial sear, flip the burgers and cook for an additional 8-10 minutes, or until the internal temperature reaches 165°F.
  8. Remove the burgers from the grill, let them rest for a few minutes, and serve on buns with your choice of toppings.
