- Preheat oven to 400°F (200°C). Roll out pie dough into a 12-inch circle on parchment paper.
- Transfer the dough on parchment to a baking sheet. Spoon leek and cheese mixture into the center, leaving a 2-inch border.
- Fold crust edges over filling, creating pleats. Bake for about 30 minutes until golden brown.
