Preparation Steps
  1. Preheat your oven to 350°F (180°C).
  2. In a large baking dish, scatter the chopped onion and minced garlic evenly. Add vegetable shortening or olive oil and place in the oven for about 15 minutes, stirring halfway through.
  3. Season the chicken thighs generously with paprika, dried thyme, garlic powder, onion powder, salt, and black pepper.
  4. Mix the uncooked white rice into the onion and garlic mixture. Arrange the seasoned chicken thighs on top and pour in the chicken broth and water.
  5. Cover with aluminum foil and bake for 30 minutes.
  6. Remove the foil and spray the exposed chicken skin lightly with oil. Return to the oven for an additional 20 minutes.
  7. Let stand for 5 minutes before serving. Fluff the rice gently with a fork and garnish with fresh thyme leaves or parsley.
