Preparation Steps
- Preheat your oven to 350°F (180°C).
- In a large baking dish, scatter the chopped onion and minced garlic evenly. Add vegetable shortening or olive oil and place in the oven for about 15 minutes, stirring halfway through.
- Season the chicken thighs generously with paprika, dried thyme, garlic powder, onion powder, salt, and black pepper.
- Mix the uncooked white rice into the onion and garlic mixture. Arrange the seasoned chicken thighs on top and pour in the chicken broth and water.
- Cover with aluminum foil and bake for 30 minutes.
- Remove the foil and spray the exposed chicken skin lightly with oil. Return to the oven for an additional 20 minutes.
- Let stand for 5 minutes before serving. Fluff the rice gently with a fork and garnish with fresh thyme leaves or parsley.
