  • 2 cups Potatoes any type, waxy potatoes hold their shape well
  • 1 medium Onion or substitute with shallots for a milder flavor
  • 2 cloves Garlic fresh is ideal, garlic powder can be used
Cooking Liquid
  • 4 cups Chicken broth can use vegetable broth for a vegetarian option
  • 2 tbsp Olive oil can substitute with canola or another neutral oil
Seasoning
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 1/2 tsp Red pepper flakes optional
Garnishing
  • 2 tbsp Fresh parsley for garnish before serving

Method
 

Step-by-Step Instructions
  1. Prepare the Crockpot by setting it to low heat to preheat while preparing the ingredients.
  2. In a medium skillet, heat a splash of olive oil and sauté sliced kielbasa for about 5 minutes until browned.
  3. Add chopped onions and minced garlic to the skillet and sauté for 2-3 minutes until translucent.
  4. Layer cubed potatoes and halved green beans in the preheated crockpot.
  5. Add the sautéed onions and garlic on top of the layered vegetables.
  6. Gently add the browned kielbasa on top of the layered vegetables.
  7. Pour chicken broth over the entire mixture, ensuring ingredients are submerged.
  8. Sprinkle salt, black pepper, and optional red pepper flakes; stir gently to combine.
  9. Cover the crockpot and cook on low for 6-8 hours or high for 3-4 hours.
  10. Once done, stir gently to combine, taste, and adjust seasoning if needed.
  11. Serve with fresh parsley sprinkled on top.
