Step-by-Step Instructions
  1. Crush the whole black peppercorns using a mortar and pestle or the bottom of a heavy skillet to release their oils.
  2. Season the chicken thighs with salt and pepper, heat a skillet with olive oil, and cook the chicken until golden brown, about 3-4 minutes on each side.
  3. In the same skillet, melt the butter, sauté the shallots and thyme for 1-2 minutes, then add the crushed peppercorns.
  4. Pour in the brandy, cooking for 2 minutes while scraping the brown bits, then add chicken broth and simmer until reduced by half.
  5. Lower the heat, stir in the heavy cream, return chicken to the skillet, and cook for an additional 6-8 minutes until sauce thickens.
  6. Serve the chicken with the sauce and garnish with chopped parsley, best served with fresh pasta or sautéed vegetables.
