Equipment

Method

Step-by-Step Instructions
  1. In a large skillet over medium heat, add ground beef, onion, and green pepper. Cook for about 5–7 minutes, breaking apart the meat until fully browned and vegetables are tender.
  2. Stir in cooked rice and drained kidney beans into the beef mixture, pour in beef broth, and bring to a boil over medium-high heat for about 3 minutes.
  3. Reduce heat to medium-low, allowing the mixture to simmer for about 5 minutes, stirring occasionally until the liquid is absorbed.
  4. Remove from heat and sprinkle shredded cheese on top, covering the skillet with a lid for about 2 minutes to melt the cheese.
  5. Scoop into bowls and top with sliced avocado, sour cream, and chopped cilantro. Add extra cheese if desired.
