  • 2 tbsp Taco Seasoning Pre-made or homemade
For the Sweet Potatoes
  • 2 cups Sweet Potatoes Diced
  • 1 tsp Paprika
  • 1 tsp Garlic Powder
  • 1/2 tsp Cinnamon
  • to taste Salt
  • to taste Pepper
For the Toppings
  • 1 cup Cottage Cheese Or Greek yogurt
  • 1 medium Avocado Sliced
  • 4 tbsp Hot Honey Store-bought or homemade
For Sautéing
  • 2 tbsp Olive Oil For roasting and sautéing
  • 1 medium Onion Diced

Method
 

Preparation Steps
  1. Preheat the oven to 400°F (200°C) and prepare a baking sheet lined with parchment paper.
  2. In a large bowl, toss diced sweet potatoes with olive oil, paprika, garlic powder, cinnamon, salt, and pepper. Spread on the prepared baking sheet and roast for 40-45 minutes.
  3. Heat olive oil in a skillet over medium heat, add diced onion, and sauté for about 5 minutes until soft.
  4. Increase the heat to medium-high, add ground beef and taco seasoning, and cook until browned, about 7-10 minutes.
  5. Assemble the bowls by layering roasted sweet potatoes and seasoned beef.
  6. Add sliced avocado and cottage cheese on top, then drizzle with hot honey.
  7. Garnish as desired and serve warm.
