  • 2 cloves Garlic Fresh enhances aroma.
  • 1 teaspoon Garam Masala Use curry powder or a homemade mix if necessary.
  • ¼ teaspoon Turmeric Optional but suggested for health benefits.
  • to taste Cayenne Pepper Adjust heat to taste.
For the Eggs
  • 4 large Eggs Large eggs work best.
  • 1 small Serrano or Jalapeño Pepper Adds a fresh kick.
For Garnish
  • to taste Fresh Cilantro Parsley can be used instead.
  • 1 tablespoon Lime Juice Lemon juice is a perfect alternative.
  • to taste Kosher Salt Can be swapped with sea salt or table salt.

Method
 

Cooking Instructions
  1. Heat ghee in a nonstick pan over medium heat. Add ¾ of the chopped shallot and 1 tablespoon of grated ginger. Sauté for 3-4 minutes until translucent.
  2. Stir in minced garlic, garam masala, turmeric, and cayenne pepper. Cook for 2 minutes until spices bloom. Season with a pinch of kosher salt.
  3. Reduce heat to medium-low, crack eggs into the pan, and season with salt. Sprinkle with sliced jalapeños and remaining shallots.
  4. Cover and cook for about 5 minutes until whites are set. Adjust cooking time for desired yolk doneness.
  5. Drizzle with lime juice and garnish with cilantro. Serve immediately with crispy rice or toasted bread.
