Marinating and Preparing Filling
- Slice flank steak against the grain and blend garlic, ginger, soy sauce, vinegar, brown sugar, sesame oil, and black pepper in a food processor. Marinate for 1-24 hours.
- Combine sour cream, lime zest, lime juice, Sriracha, and cilantro in a bowl. Mix well and adjust to taste.
- Shred cabbage and slice scallions. Whisk vinegar, sesame oil, mayonnaise, honey, and pepper in a bowl and add cabbage and scallions.
Cooking and Assembly
- Heat olive oil in a skillet, cook marinated steak for 2-3 minutes without stirring, then flip and cook for another 4-5 minutes.
- Warm tortillas in a separate skillet for about 1 minute each side until pliable.
- Assemble tacos by placing beef on tortillas, topping with slaw and drizzling with sauce.
