Ingredients
  

Beef Marinade
  • 1 pound Flank Steak thinly sliced
  • 1/4 cup Soy Sauce use tamari for gluten-free
  • 2 tablespoons White Wine or Rice Vinegar or apple cider vinegar
  • 2 tablespoons Brown Sugar coconut sugar is a healthy alternative
  • 2 teaspoons Sesame Oil or olive oil
  • 1 tablespoon Ginger Root finely chopped or powdered
  • 4 cloves Garlic crushed
  • 1/2 teaspoon Ground Black Pepper adjust to taste
Cilantro Lime Sriracha Sauce
  • 1/2 cup Sour Cream or Greek yogurt
  • 1 whole Lime zest and juice
  • 1 tablespoon Sriracha adjust based on heat tolerance
  • 1/4 cup Fresh Cilantro or parsley
Slaw
  • 2 cups Cabbage shredded, mix purple and white
  • 2 scallions Scallions sliced
  • 1/4 cup Mayonnaise or vegan mayo
  • 1 tablespoon Honey or maple syrup
For Serving
  • 8 units Tortillas (Flour) or corn for gluten-free
  • 1 tablespoon Olive Oil for cooking the beef

Method
 

Marinating and Preparing Filling
  1. Slice flank steak against the grain and blend garlic, ginger, soy sauce, vinegar, brown sugar, sesame oil, and black pepper in a food processor. Marinate for 1-24 hours.
  2. Combine sour cream, lime zest, lime juice, Sriracha, and cilantro in a bowl. Mix well and adjust to taste.
  3. Shred cabbage and slice scallions. Whisk vinegar, sesame oil, mayonnaise, honey, and pepper in a bowl and add cabbage and scallions.
Cooking and Assembly
  1. Heat olive oil in a skillet, cook marinated steak for 2-3 minutes without stirring, then flip and cook for another 4-5 minutes.
  2. Warm tortillas in a separate skillet for about 1 minute each side until pliable.
  3. Assemble tacos by placing beef on tortillas, topping with slaw and drizzling with sauce.
