Chimichurri Sauce Preparation
- Finely chop fresh parsley, garlic, and Fresno pepper by hand. In a bowl, mix in oregano, salt, and pepper. Gradually add olive oil and vinegar, blending until well combined. Let sit for at least 1 hour.
Shrimp Marination
- Rinse and pat dry the shrimp. In a bowl, toss with olive oil, garlic, honey, smoked paprika, salt, and pepper. Marinate in the fridge for 20 minutes.
Shrimp Cooking
- Heat a skillet over high heat. Add marinated shrimp in a single layer. Cook for 2-3 minutes on each side until opaque and golden. Avoid overcrowding.
Serving
- Transfer shrimp to a serving dish, spoon chimichurri over the shrimp, and serve any remaining sauce on the side.

Notes
For the best chimichurri, chop herbs by hand. Ensure skillet is hot to prevent steaming shrimp. Leftovers can be stored in an airtight container for up to 3 days.
