- Preheat your oven to 200°C (400°F) and prepare a baking sheet with aluminum foil and cooking spray.
- In a skillet, heat olive oil and sauté onion and garlic for 5-7 minutes until soft and fragrant.
- In a mixing bowl, combine ground chicken, cooled onion-garlic mixture, breadcrumbs, milk, Parmesan, egg, chopped parsley, Italian seasoning, and salt. Mix gently.
- Form two-thirds of the mixture into a rectangle, place mozzarella in the center, and cover with remaining mixture.
- Spread marinara sauce over the top and bake for 45 minutes.
- Mix panko breadcrumbs, Parmesan, melted butter, and parsley for topping.
- Remove meatloaf, sprinkle topping, and add mozzarella. Bake for an additional 15-20 minutes.
- Let the meatloaf rest for 10 minutes before slicing and serving.
