  • 1 tablespoon Italian Seasoning Create your own blend with oregano, basil, and thyme.

  • 8 ounces Mozzarella Cheese (slices) Opt for low-fat mozzarella for fewer calories.
For the Topping
  • 1 cup Marinara Sauce Swap with homemade tomato sauce or salsa.
  • 1/2 cup Panko Breadcrumbs Regular breadcrumbs can be used, but won’t be as crunchy.
  • 2 tablespoons Butter (melted) Olive oil is a great dairy-free alternative.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 200°C (400°F) and prepare a baking sheet with aluminum foil and cooking spray.
  2. In a skillet, heat olive oil and sauté onion and garlic for 5-7 minutes until soft and fragrant.
  3. In a mixing bowl, combine ground chicken, cooled onion-garlic mixture, breadcrumbs, milk, Parmesan, egg, chopped parsley, Italian seasoning, and salt. Mix gently.
  4. Form two-thirds of the mixture into a rectangle, place mozzarella in the center, and cover with remaining mixture.
  5. Spread marinara sauce over the top and bake for 45 minutes.
  6. Mix panko breadcrumbs, Parmesan, melted butter, and parsley for topping.
  7. Remove meatloaf, sprinkle topping, and add mozzarella. Bake for an additional 15-20 minutes.
  8. Let the meatloaf rest for 10 minutes before slicing and serving.
