  • 1 clove Garlic minced or garlic powder substitute
  • 2 tablespoons Fresh lemon juice
  • 1 teaspoon Dijon mustard optional
  • 1/2 teaspoon Kosher salt
  • 1/4 cup Parmesan cheese omit for dairy-free option

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 500°F and set racks to middle and lowest settings.
  2. Rinse Brussels sprouts, trim ends, and slice in half. Place cut side down on a baking sheet.
  3. Cover baking sheet with aluminum foil and roast Brussels sprouts for 12-15 minutes.
  4. Remove foil and roast uncovered for another 10 minutes until golden brown.
  5. In a mixing bowl, mash together anchovy fillets, minced garlic, and salt into a paste. Whisk in tahini, lemon juice, Dijon mustard, and olive oil until smooth.
  6. Tear hearty whole-wheat bread into chunks, toss with olive oil, salt, and pepper, and bake for about 5 minutes until crispy.
  7. Toss roasted Brussels sprouts with tahini dressing, top with croutons and sunflower seeds.
  8. Serve warm and optionally top with grated Parmesan cheese and parsley.
