- Preheat your oven to 500°F and set racks to middle and lowest settings.
- Rinse Brussels sprouts, trim ends, and slice in half. Place cut side down on a baking sheet.
- Cover baking sheet with aluminum foil and roast Brussels sprouts for 12-15 minutes.
- Remove foil and roast uncovered for another 10 minutes until golden brown.
- In a mixing bowl, mash together anchovy fillets, minced garlic, and salt into a paste. Whisk in tahini, lemon juice, Dijon mustard, and olive oil until smooth.
- Tear hearty whole-wheat bread into chunks, toss with olive oil, salt, and pepper, and bake for about 5 minutes until crispy.
- Toss roasted Brussels sprouts with tahini dressing, top with croutons and sunflower seeds.
- Serve warm and optionally top with grated Parmesan cheese and parsley.
