Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Rinse and dry the whole chicken breasts thoroughly and season generously with kosher salt and freshly ground black pepper.
  3. In a large, oven-safe pan, heat 2 tablespoons of olive oil over medium heat. Add chopped onion and bacon strips, cooking for 3-4 minutes until onions are soft and bacon is slightly crispy.
  4. Pour in 1 cup of white wine, simmer for 2 minutes, then remove onion and bacon mixture and set aside.
  5. Add another tablespoon of olive oil to the pan, increase heat to medium-high, and sear seasoned chicken breasts for about 2 minutes on each side.
  6. In a separate bowl, combine chopped pears, ½ cup of honey, 4 tablespoons of fresh thyme, and salt and pepper. Drizzle with olive oil and mix to coat pears.
  7. Layer the cooked onion and bacon mixture at the bottom of a roasting pan, place seared chicken on top, and sprinkle with additional thyme.
  8. Roast in the heated oven for 20 minutes.
  9. Pour prepared pear mixture over the chicken and bake for an additional 10 minutes, checking that pears remain tender.
  10. Remove from oven, let rest for a few minutes, and serve.
