- Preheat your oven to 400°F (200°C).
- Rinse and dry the whole chicken breasts thoroughly and season generously with kosher salt and freshly ground black pepper.
- In a large, oven-safe pan, heat 2 tablespoons of olive oil over medium heat. Add chopped onion and bacon strips, cooking for 3-4 minutes until onions are soft and bacon is slightly crispy.
- Pour in 1 cup of white wine, simmer for 2 minutes, then remove onion and bacon mixture and set aside.
- Add another tablespoon of olive oil to the pan, increase heat to medium-high, and sear seasoned chicken breasts for about 2 minutes on each side.
- In a separate bowl, combine chopped pears, ½ cup of honey, 4 tablespoons of fresh thyme, and salt and pepper. Drizzle with olive oil and mix to coat pears.
- Layer the cooked onion and bacon mixture at the bottom of a roasting pan, place seared chicken on top, and sprinkle with additional thyme.
- Roast in the heated oven for 20 minutes.
- Pour prepared pear mixture over the chicken and bake for an additional 10 minutes, checking that pears remain tender.
- Remove from oven, let rest for a few minutes, and serve.
