- Preheat your oven to 400°F (200°C).
- In a mixing bowl, combine melted butter, olive oil, and crushed dried rosemary.
- Pour approximately 2 tablespoons of the butter and rosemary mixture into the bottom of a 2-quart baking dish, then layer the sliced sweet potatoes and shallots.
- Brush the top of the layered sweet potatoes with the remaining butter-oil mixture and season generously.
- Cover the baking dish with aluminum foil and roast for 1 hour.
- Increase the oven temperature to 450°F (232°C) and roast uncovered for an additional 10-15 minutes.
- Allow to cool slightly before serving.
