For the Creamy Avocado Cilantro Sauce
  • 1 ripe Avocado Choose a ripe avocado for the best texture.
  • 1/4 cup Fresh Cilantro Chopped.
  • 1/4 cup Greek Yogurt Or sour cream.
  • 2 tbsp Lime Juice Can substitute with lemon juice.
  • 1 clove Garlic Minced.
  • Salt and Pepper To taste.

Method
 

Step-by-Step Instructions
  1. Finely chop the fresh salmon fillet or pulse in a food processor until coarsely minced. Combine salmon, parsley, cilantro, breadcrumbs, egg, garlic, smoked paprika, lemon zest, salt, and pepper in a large bowl. Mix thoroughly.
  2. Scoop portions of the mixture (about 2 inches diameter) and shape into balls. You should be able to form approximately 12 to 14 salmon balls.
  3. Heat olive oil in a skillet over medium heat. Cook salmon balls for about 3-4 minutes on each side until golden brown and cooked through.
  4. Blend avocado, cilantro, Greek yogurt, lime juice, garlic, and salt and pepper in a food processor until smooth and creamy.
  5. Arrange salmon balls on a serving platter and drizzle with avocado sauce. Serve fresh or refrigerate leftovers.
