- Prepare the Chicken: Pat the boneless chicken thighs dry with paper towels. In a shallow dish, combine flour with garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and pepper. Dredge each chicken thigh in this mixture, shaking off excess.
- Make the Bang Bang Sauce: In a medium bowl, whisk together mayonnaise, sweet chili sauce, sriracha, honey, rice vinegar, minced garlic, and grated ginger until smooth. Set aside.
- Cook the Chicken: Heat vegetable oil in a large skillet over medium-high heat. Place chicken thighs skin-side down and cook for 6-7 minutes until golden. Flip, reduce heat to medium, and cook until internal temperature reaches 165°F, about 20-25 minutes.
- Finish and Serve: Remove chicken from heat and brush with half of the bang bang sauce. Serve with remaining sauce and sides.
