  • 4 large Flour Tortillas or use corn/whole wheat
For the Sauce
  • 1/4 cup Mayonnaise or Greek yogurt for lighter option
  • 2 tablespoons Ketchup sugar-free or homemade optional
  • 1 tablespoon Mustard yellow is best, Dijon ups flavor
For Cooking
  • Cooking Oil or Butter for frying
  • Salt
  • Pepper

Method
 

Step-by-Step Instructions
  1. Heat a large skillet over medium-high heat and add cooking oil or butter.
  2. Add the ground beef, seasoned with salt and pepper, and cook for 5-7 minutes until browned.
  3. Stir in diced onions and cook for 2-3 minutes until they are translucent.
  4. In a bowl, whisk together mayonnaise, ketchup, and mustard to create the sauce.
  5. Spread sauce on one half of a tortilla, layer with cheese, beef mixture, diced tomatoes, and pickles, then fold.
  6. Fry the assembled quesadilla in the hot skillet for 3-4 minutes on each side until crispy.
  7. Remove from the skillet, cool slightly, then slice into wedges and serve.
