- In a large mixing bowl, combine ground chicken, chipotle peppers, adobo sauce, smoked paprika, cumin, garlic powder, onion powder, salt, black pepper, lime juice, breadcrumbs, and egg. Mix until well blended.
- Divide the mixture into four equal portions and shape each into a patty about 1 inch thick, making a slight indentation in the center.
- Heat a grill or skillet over medium heat. Cook patties for 5-6 minutes on each side until golden brown and internal temperature reaches 165°F.
- If using cheese, place a slice on each patty during the last minute of cooking, covering to help it melt.
- While patties cook, prepare chipotle mayo by whisking together mayonnaise, chopped chipotle pepper, lime juice, garlic powder, and salt.
- To assemble, toast burger buns, spread chipotle mayo on the bottom half, and layer with lettuce, chicken patty, sliced tomatoes, onions, and jalapeños. Top with the other half of the bun.
- Serve immediately with sides like fries or salad.
