Ingredients
  

For the Chicken Patties
  • 1 pound Ground Chicken or ground turkey
  • 2 tablespoons Chipotle Peppers in Adobo Sauce chopped
  • 2 tablespoons Adobo Sauce
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Garlic Powder or fresh garlic
  • 1 teaspoon Onion Powder
  • 1 teaspoon Salt adjust to taste
  • 1 teaspoon Black Pepper adjust to taste
  • 2 tablespoons Lime Juice fresh is best
  • 1/2 cup Breadcrumbs panko recommended
  • 1 large Egg for binding
For the Chipotle Mayo
  • 1/2 cup Mayonnaise or Greek yogurt
  • 1 tablespoon Chopped Chipotle Pepper
  • 1 tablespoon Additional Lime Juice
  • 1/2 teaspoon Garlic Powder to taste
For Assembly
  • 4 buns Burger Buns whole wheat or gluten-free
  • 1 cup Fresh Toppings lettuce, tomatoes, onions, jalapeños
  • 4 slices Sliced Pepper Jack Cheese optional

Method
 

Preparation
  1. In a large mixing bowl, combine ground chicken, chipotle peppers, adobo sauce, smoked paprika, cumin, garlic powder, onion powder, salt, black pepper, lime juice, breadcrumbs, and egg. Mix until well blended.
  2. Divide the mixture into four equal portions and shape each into a patty about 1 inch thick, making a slight indentation in the center.
  3. Heat a grill or skillet over medium heat. Cook patties for 5-6 minutes on each side until golden brown and internal temperature reaches 165°F.
  4. If using cheese, place a slice on each patty during the last minute of cooking, covering to help it melt.
  5. While patties cook, prepare chipotle mayo by whisking together mayonnaise, chopped chipotle pepper, lime juice, garlic powder, and salt.
  6. To assemble, toast burger buns, spread chipotle mayo on the bottom half, and layer with lettuce, chicken patty, sliced tomatoes, onions, and jalapeños. Top with the other half of the bun.
  7. Serve immediately with sides like fries or salad.
