  • 1 cup Plain Greek Yogurt Can replace with sour cream
  • 1 cup Mozzarella (shredded) Divided
  • ½ cup Feta Cheese Can swap with goat cheese
  • 1 cup Fresh Spinach Substitute with kale or Swiss chard
  • ½ cup Sun-Dried Tomatoes Use fresh tomatoes for a lighter taste
  • 1 medium Red Onion Yellow or white onion works fine
  • 1 tablespoon Italian Seasoning Use fresh herbs if desired
  • ½ cup Vegetable Stock/Water Use stock for more flavor
  • 1 teaspoon Salt Adjust according to taste
  • ¼ cup Fresh Basil For garnish

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 360°F (180°C). Gather the necessary ingredients and your favorite baking dish.
  2. Rinse 1 cup of quinoa under cold water using a fine mesh colander. Let it drain.
  3. In a medium saucepan, combine the rinsed quinoa with 2 cups of water. Bring to a rolling boil, then reduce to low and cover. Simmer for 15 minutes.
  4. In a large baking dish, mix the cooked quinoa with the sun-dried tomato pesto, Greek yogurt, ¾ cup mozzarella, ½ cup feta, spinach, sun-dried tomatoes, diced red onion, Italian seasoning, and ½ cup vegetable stock.
  5. Top the mixture with the remaining ½ cup mozzarella and cover the dish with aluminum foil.
  6. Bake for 30 minutes until the cheese melts and the top is golden.
  7. Remove from oven, sprinkle with ¼ cup feta, additional sun-dried tomatoes, and fresh basil before serving.
