Method
 

Step-by-Step Instructions
  1. In a mixing bowl, whisk together sweet chili sauce, soy sauce, honey, fresh lime juice, and ground ginger until well-combined.
  2. Place the halved chicken breasts in a zip-top bag or shallow dish, pouring half of the marinade over them.
  3. Heat olive oil in a skillet over medium-high heat until shimmering, then add the marinated chicken breasts.
  4. Pour in the remaining marinade and simmer for about 3-4 minutes.
  5. Transfer the chicken and sauce mixture into the pressure cooker, sealing the lid tightly.
  6. Remove the Thai Sweet Chili Chicken from the pressure cooker and garnish with sliced green onions and lime wedges.
