Ingredients
  

For the Risotto
  • 1 cup Quinoa pre-cooked
  • 4 medium Fresh Tomatoes 2 for sauce, 2 diced
  • ½ cup Sun-Dried Tomatoes soaked in water for 30 minutes
  • 2 tablespoons Olive Oil or preferred cooking oil
  • 1 medium Zucchini diced
  • 1 cup Basil fresh is best
  • 1 cup Arugula or spinach as a substitute
  • 2-3 cloves Garlic adjust to taste
  • 1 cup Mozzarella Cheese optional, skip for vegan
  • 1 cup Parmesan Cheese optional, can substitute nutritional yeast for vegan

Method
 

Step-by-Step Instructions
  1. In a blender, combine 2 fresh tomatoes, the soaked sun-dried tomatoes, basil, and 2-3 cloves of garlic. Blend on high until smooth and creamy.
  2. Dice the remaining 2 fresh tomatoes and zucchini into bite-sized pieces.
  3. In a medium-sized pan, heat 2 tablespoons of olive oil over medium heat. Add the chopped tomatoes and cook for about 1 minute.
  4. Pour the prepared tomato sauce into the pan with the sautéed tomatoes, stirring well. Then, add in 1 cup of pre-cooked quinoa.
  5. Stir in the diced zucchini and arugula, mixing everything well. Drizzle in more olive oil if desired.
  6. Once mixed, turn off the heat and stir in your choice of mozzarella or parmesan until melted.
