- In a small mixing bowl, combine mayonnaise, honey, and dijon mustard. Add fresh thyme, garlic powder, and onion powder, then season with salt and pepper. Stir until smooth and creamy.
- Lay out the tortillas on a clean surface. Spread a generous layer of the creamy thyme dressing evenly over one side of each tortilla.
- Layer mixed greens across the center of each tortilla, add red onion (if using), then half of the cheese and turkey. Add slices of avocado for a colorful filling.
- Tightly roll up each tortilla from one end to encapsulate the fillings. Use a little extra dressing on the edge to seal.
- Trim the ends of each roll, then slice into 5-6 equal pieces. Arrange on a platter and serve with extra dressing on the side.
