- Preheat your oven to 350°F (175°C). Cut the spaghetti squash in half lengthwise and scoop out the seeds. Place the squash halves cut side down in a baking dish with about ½ inch of water. Bake for approximately 30 minutes until tender.
- In a large skillet, heat olive oil over medium heat. Add chopped onion and sauté for about 5-7 minutes until translucent.
- Stir in minced garlic and cook for an additional 1-2 minutes. Add cherry tomatoes and cook for another minute until softened.
