Ingredients
  

For the Shrimp
  • 1.25 lbs large shrimp (21/25) Optional: Can substitute with chicken or tofu for a different protein.
For the Veggies
  • 1 small zucchini, sliced into half moons Substitute with yellow squash if desired.
  • 1 small yellow squash, sliced into quarters Can use bell peppers for a different flavor profile.
  • 1 pint grape tomatoes Whole cherry tomatoes may also be substituted.
  • 1 cup green bell pepper, chopped Feel free to choose any color bell pepper for variation.
  • 0.5 small red onion, chopped Shallots can be an alternative for a milder flavor.
  • 1.5 cups fresh corn Frozen corn can be used if fresh is not available.
For Seasoning
  • 3 tablespoons olive oil Avocado oil is a viable substitute.
  • 3 cloves garlic, minced Garlic powder (1 tbsp) can be used in a pinch.
  • salt Adjust to your preference.
  • pepper Adjust to your preference.
  • 1 tsp paprika
  • 0.5 tsp celery seed
  • 0.5 tsp dried thyme
  • 0.25 tsp cayenne pepper, optional Adjust cayenne for your desired heat level.
For Garnish
  • 1.5 tablespoons minced parsley Chives may be used as an alternative to parsley.
  • 4 lemon wedges, for serving Lime wedges can be used for a zesty twist.

Method
 

Preparation
  1. Preheat your grill to medium-high heat, around 425°F. This step is crucial for even cooking.
  2. Cut eight sheets of heavy-duty aluminum foil, each approximately 12x15 inches.
  3. In a large mixing bowl, combine the sliced zucchini, yellow squash, grape tomatoes, chopped bell pepper, red onion, corn, and shrimp. Toss gently.
  4. Drizzle olive oil over the mixture and add minced garlic, salt, and the spices. Toss until everything is well coated.
  5. Divide the mixture among the foil sheets, folding the edges to create sealed packets.
  6. Place the sealed packets on the grill for 12 to 14 minutes, flipping halfway through.
  7. Carefully remove from the grill and garnish with parsley. Serve with lemon wedges.
