  • 6 cups Fresh Baby Spinach
  • 2 large Avocados sliced
  • 1 pound Colossal Shrimp peeled and deveined
  • 1 cup Grape Tomatoes halved
  • 1/4 cup Red Onion thinly sliced
  • 1 tablespoon Old Bay Seasoning
  • 4 slices Cooked Bacon crisped
For the Avocado Ranch Dressing
  • 1 large Avocado ripe
  • 1/2 cup Mayonnaise
  • 2 tablespoons Lemon Juice fresh
  • 1 teaspoon Dried Dill
  • 1 clove Garlic minced
  • 2 tablespoons Fresh Parsley chopped
  • 2 tablespoons Water as needed

Method
 

Dressing Preparation
  1. Blend the creamy avocado ranch dressing by combining avocado, mayonnaise, lemon juice, dried dill, garlic, parsley, and water in a blender until smooth.
Shrimp Preparation
  1. Season the shrimp with Old Bay seasoning in a bowl, ensuring they're evenly coated.
  2. Heat olive oil in a skillet over medium-high heat, then sauté shrimp for 2-3 minutes on each side until pink and opaque.
Salad Assembly
  1. In a large mixing bowl, place spinach, top with shrimp, avocado, grape tomatoes, and onion, drizzle with dressing, and toss gently.
  2. Add remaining shrimp and avocado slices on top with bacon, and garnish with parsley.
