  • 4 cups Low Sodium Beef Broth or chicken/vegetable broth
  • 1 cup Dry Red Wine or additional beef broth
  • 2 tablespoons Tomato Paste or tomato sauce
  • 1 tablespoon Dijon Mustard or yellow mustard
  • 1 teaspoon Dried Thyme or fresh thyme at triple the amount
  • 1 cup Pearl Barley or quick-cooking barley
  • 1 leaf Bay Leaf can be omitted
  • 1/4 cup Chopped Fresh Parsley for garnish

Method
 

Step-by-Step Instructions
  1. Season the Beef: Cut the beef into chunks and season with salt and pepper.
  2. Brown the Beef: Heat oil in a skillet and sear beef cubes for 4-5 minutes.
  3. Transfer to Slow Cooker: Move beef into slow cooker.
  4. Add Vegetables and Ingredients: Sauté mushrooms, carrots, garlic, potatoes, and onion, then transfer to slow cooker.
  5. Combine Other Ingredients: Add broth, wine, tomato paste, mustard, thyme, barley, and bay leaf, and stir.
  6. Cook Slowly: Cover and cook on high for 4 hours, then low for 2 hours.
  7. Serve and Garnish: Taste and adjust seasoning, serve hot garnished with parsley.
