Ingredients
  

  • 2 pounds boneless skinless chicken thighs
  • 1 can 20 ounces pineapple chunks in juice, undrained
  • 1 cup teriyaki sauce
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 1 tablespoon minced garlic
  • 1 tablespoon minced ginger
  • 1 red bell pepper sliced
  • 1 green bell pepper sliced
  • 1/2 cup green onions chopped
  • Cooked rice for serving

Method
 

  1. Place the chicken thighs in the slow cooker.
  2. In a medium bowl, combine the pineapple chunks with juice, teriyaki sauce, soy sauce, brown sugar, minced garlic, and minced ginger. Mix well.
  3. Pour the sauce mixture over the chicken in the slow cooker.
  4. Add the sliced red and green bell peppers on top of the chicken.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
  6. Before serving, shred the chicken with two forks and stir to combine with the sauce and vegetables.
  7. Serve the Hawaiian chicken over cooked rice and garnish with chopped green onions.
