Step‑by‑Step Instructions
- Step 1: Heat 1 tablespoon of oil in a frying pan over medium-high heat. Once shimmering, sear the chunks of chuck steak in batches for 4-5 minutes until golden brown. Transfer to the slow cooker.
- Step 2: In the same pan, add remaining oil and toss in chopped onions, garlic, and ginger. Sauté for 2-3 minutes until onions soften and become translucent.
- Step 3: Add ground turmeric, coriander, cumin, garam masala, and red chili powder to the sautéed aromatics. Stir for about 1 minute, allowing spices to bloom.
- Step 4: Pour in beef broth and water, using a spatula to scrape up any browned bits from the pan. Simmer for 2 minutes to meld flavors.
- Step 5: Transfer the aromatic mixture into the slow cooker with the seared beef. Add cinnamon stick, bay leaf, chopped cilantro, and a pinch of salt. Mix well.
- Step 6: Cover slow cooker and set to cook on low for 8 hours or high for 4 hours. Let it simmer undisturbed for best results.
- Step 7: Once cooking time is complete, stir the curry gently. Remove cinnamon stick and bay leaf before serving. Garnish with additional chopped cilantro.

Notes
Searing the beef enhances depth of flavor. Keep an eye on the consistency of the curry as it cooks.
