- Preheat your oven to 400°F (200°C) and prepare a 9x13 inch baking pan by lightly spraying it with cooking spray.
- Crush 16 ounces of vanilla wafers into fine crumbs and mix with ¾ cup melted unsalted butter. Press into the bottom of the pan and bake for 5 minutes.
- In a bowl, whisk together 3 cups of all-purpose flour, 1.5 teaspoons of baking soda, 1 teaspoon of salt, 1.25 cups of granulated sugar, and the 2 boxes of instant banana pudding mix.
- Add 3 large room-temperature eggs, 2 teaspoons of vanilla extract, and the remaining 1.25 cups of melted butter. Stir gently until just combined.
- Fold in 2 cups of white chocolate chips and the reserved crushed vanilla wafers, then spread over the warm crust.
- Bake for 15-20 minutes, checking for a golden color around the edges and a toothpick coming out clean.
- Allow to cool in the pan before slicing into squares or bars.
