Method
 

Step-by-Step Instructions
  1. In a mixing bowl, combine masa harina and salt, then gradually add warm water until a soft and pliable dough forms.
  2. Divide the dough into 8 equal portions and roll each into a ball. Flatten each ball into a disc about 3 inches wide.
  3. Heat a dry skillet over medium heat and cook the discs for 1-2 minutes on each side until they develop light brown spots.
  4. Once cooked, pinch the edges of each disc to create a shallow rim.
  5. Heat vegetable oil in a separate skillet over medium heat, and fry each sope for 1–2 minutes per side until golden-brown.
  6. Spread a layer of refried beans on each warm sope, top with crumbled queso fresco, Mexican crema, and cilantro.
  7. Serve warm with salsa or hot sauce on the side.
