For the Filling
  • 5 medium Ripe Bananas use very ripe bananas for best flavor
  • 1/2 cup Granulated Sugar adjust to taste
  • 1/4 cup Light Brown Sugar can substitute with more granulated sugar
  • 1/4 cup Unsalted Butter melted
  • 2 tbsp Water
  • 2 tbsp Lemon Juice can replace with lime juice
  • 1 tsp Vanilla Extract use pure vanilla for best quality
  • 1 tsp Ground Cinnamon optional nutmeg can be combined
  • 1/4 tsp Ground Nutmeg optional but recommended
  • 1/4 tsp Salt ensure not to omit
For the Topping
  • 1 cup All-Purpose Flour can explore gluten-free options
  • 1 tbsp Baking Powder ensure freshness
  • 1/2 tsp Baking Soda ensure freshness
  • 1 cup Buttermilk can substitute with milk and vinegar
  • 2 tbsp Turbinado Sugar optional for crunchy topping
For Serving
  • 1 cup Whipped Cream or Vanilla Ice Cream for serving

Method
 

Preparation
  1. Begin by slicing your ripe bananas into 1/4 inch thick pieces.
  2. In a bowl with the sliced bananas, combine granulated sugar, light brown sugar, melted unsalted butter, water, lemon juice, vanilla extract, ground cinnamon, ground nutmeg, and salt.
  3. Allow the banana mixture to rest for about 15-20 minutes.
  4. Whisk together all-purpose flour, baking powder, baking soda, and salt in another bowl.
  5. In a small bowl, combine buttermilk, melted unsalted butter, and vanilla extract. Whisk together.
  6. Pour the wet mixture into the bowl with the dry ingredients and stir until just combined.
  7. Preheat your oven to 375°F (190°C).
  8. Pour the banana mixture into a 9x13 inch baking dish.
  9. Spread the prepared cobbler batter over the top of the banana filling.
  10. Dust the top of the batter with turbinado sugar if desired.
  11. Bake for 35-45 minutes until golden and a toothpick comes out clean.
  12. Allow to cool for about 15-20 minutes before serving.
  13. Serve warm with whipped cream or vanilla ice cream.
