  • 1 tbsp Taco Seasoning adjust to taste
  • 1/2 cup Water adjust to consistency
  • 1 cup Enchilada Sauce mild or spicy based on preference
  • 1 can Black Beans drained
  • 1 can Canned Corn or fresh corn when in season
  • 1 cup Shredded Pepper Jack Cheese can substitute with Colby jack or Monterey jack
  • 1/2 cup Sour Cream or Greek yogurt
  • 2 tbsp Chopped Scallions for garnish
For Topping
  • 1 avocado Avocado Slices optional
  • 1/4 cup Fresh Cilantro for garnish

Cooking Steps
  1. Start by bringing a large pot of salted water to a boil. Add the cheese tortellini and cook according to package instructions, usually about 3-5 minutes. Drain and set aside.
  2. In a large skillet over medium-high heat, cook the ground beef, breaking it apart, until browned (about 6-8 minutes). Drain excess grease.
  3. Sprinkle in taco seasoning and pour in enchilada sauce with a splash of water. Stir and let it bubble for 2-3 minutes to thicken.
  4. Add black beans and canned corn, stir well and simmer for another 2-3 minutes.
  5. Gently fold in the cooked tortellini, ensuring each piece is coated. Stir for 1-2 minutes on low heat.
  6. Sprinkle shredded pepper jack cheese on top. Broil for 3 minutes until bubbly, or cover and let it melt over low heat for 3-5 minutes.
  7. Serve hot, topped with sour cream and chopped scallions.
